This is truly a winner of a dinner.
Roasted marinara bursts with flavor and brings Italian-seasoned ground turkey to life. You will not even think to ask “where’s the beef?”
Pair the meat loaf with some simple garlic mashed potatoes to keep the “mmm, mmm, yu-ums” coming.
Note: the marinara may brown or blacken in spots during cooking. Have no worry, it will taste amazing. Scraping those little bits off the broiler pan afterwards is the highlight of the meal. So good.
Ingredients List
- Olive oil spray
- 1 1/2 lbs ground turkey breast (7% fat)
- 1 1/4 cups marinara pasta sauce, divided (I use Newman’s Own Marinara)
- 1/2 cup Italian-seasoned breadcrumbs
- 1/2 cup shredded Parmesan cheese
- 1/2 cup chopped onion
- 1 tsp garlic powder
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 egg
Method
Preheat oven to 350ºF
Light spray a broiler pan with olive oil. Set aside.
In a large bowl combine 1/2 cup pasta sauce with ground turkey, breadcrumbs, Parmesan, onion, garlic, oregano, basil, salt, black pepper and egg.
Place turkey mixture on broiler pan and shape into a loaf approximately 8 inches x 4 inches.
Evenly spread 3/4 cup pasta sauce over top and sides of meatloaf.
Bake for 1 hour. Remove from oven an let stand for 10 minutes before slicing and serving.
