Honey-roasted Baby Potatoes

Anger bubbles in me like a pasta pot on the stove when part of a dinner takes longer to cook than the directions say.   It throws off my meal and really throws off my mood.

Timing is especially important when you are barbecuing. It’s pretty hard to keep a steak waiting.

And, that’s what I had to do the first time I made Honey-roasted Potatoes. The recipe’s 35 minutes of roasting time turned out to be 55 minutes.

But, the end result was so sweet and wonderful that I wrestled that recipe and won.  I simply added a little more onion and switched to tender, smaller baby potatoes.

Honey-roasted Baby Potatoes steal the show whenever I serve them. The onions caramelize and the potatoes melt like candy in your mouth.

Ingredients List

  • Olive oil spray
  • 1 lb baby potatoes, quartered (use red, white or a mixture like I did)
  • 1 small onion, diced
  • 2 Tbsp butter, melted
  • 1 Tbsp honey
  • 1 tsp dry mustard
  • Salt and pepper

Method

Preheat oven to 375ºF. Lightly coat 11×7 baking dish with olive oil spray.

Place potatoes evenly in baking dish. Sprinkle onion over potatoes.

In a small bowl, combine butter, honey, mustard, and just a pinch of salt and pepper.

Pour butter mixture over potatoes and lightly toss potatoes to coat.

Bake for 35 minutes total, being sure to gently flip potatoes over at 20 minutes. Serve warm.
