Chili-rubbed Pork Chops

Some recipes are just too good to be true.

Chili-rubbed Pork Chops are crazy simple and crazy good.

Just a simply seasoned “rub” gives grilled pork a sweet and zippy flavor while sealing in the juices for moist, perfect chops on the grill.

I found this recipe through Weight Watchers online about 9 years ago. It was one of the first dishes that fit my healthier way of eating and convinced me that food could still be excellent without cheese and oil and breading.

The only thing I’ve had to adjust from the original recipe  is the quantities/portions. Four hungry eaters need a bit more than four dieters, and I hate running out of rub before the last chop is covered.

Ingredients List

  • 3 Tbsp chili powder
  • 2 Tbsp brown sugar
  • 4 tsp ground cumin
  • 2 tsp garlic powder
  • 4 Tbsp Worcestershire sauce
  • 1 1/2 to 2 lbs lean boneless pork chop (ideally 1/2 inch think)

Method

Preheat grill to medium.

In a small bowl, combine chili powder, sugar, cumin and garlic powder. Mix in Worcestershire sauce and stir until paste forms.

Rub paste all over pork chops until throughly coated.
