Many of my cookbooks just collect dust.
Others get cracked open occasionally to the same two pages for a favorite recipe.
A precious few are beat up, dog-eared and used so much I fear I may have to buy a new copy or use a lot of tape.
Anne Byrn’s the The Cake Mix Doctor
and Cupcakes: From the Cake Mix Doctor are two of my precious few.
Byrn is a master at making a store-bought cake or muffin mix into something extraordinary. Just reading her recipes make you search for a reason to bake.
And, I especially love the Cupcakes version because it includes MUFFINS.
Oh, I do love muffins. And, her Double Lemon Poppy Seed Cheesecake Muffins are my absolute favorite to serve at a brunch or at coffee with the ladies.
But, the Cake Mix Doctor has made some Bunco and Book Club guests very happy. One friend said she dreamt about my Snickerdoodle Cake that night!
Both books are favorites of mine to give as a gift. I’ve made so many of the recipes that I can add a personal touch with sticky noted comments  throughout.
