This quick pesto spread recipe was inspired by my oldest son. He wanted an appetizer with a baguette. The kid loves bread.
My usual go-to fondue was going to be too hard to handle at a potluck. I needed a spread that could handle room temperature conditions.
I made two new-to-me pesto spreads for the occasion. One was an artichoke pesto that I was not impressed with. But, oh, this pesto and goat cheese spread was a huge hit. So good I even made it again that same week for the Bunco ladies.
Ingredients List
- 4 oz goat cheese at room temperature
- 4 oz 1/3 reduced fat cream cheese at room temperature
- 1/3 cup prepared basil pesto
Method
Stir goat cheese, cream cheese and pesto until thoroughly combined. Spread on sliced baguette immediately or chill in the refrigerator until 1/2 hour before serving. The spread is softer and easier to spread at room temperature.
