Pesto Hummus

Just a teaspoon of hummus helps the vegetables go down...

Theory: Pesto + Hummus = Yum

This was a mad science kind of creation for me. I felt like experimenting and after looking searching the pantry, the fridge and the internet Pesto Hummus was born.

Conclusion: It’s wonderful.

In fact, Pesto Hummus even inspired my own version of the famous Mary Poppins song, “Just a teaspoon of hummus helps the vegetables go down…”

The bite of the basil and garlic pair well with the nutty creaminess of the Tahini. The white beans just give it all something to hang on to.

Ingredients List

  • 3 garlic cloves
  • 1/4 cup pine nuts, toasted*
  • 1 (15 0z) can white beans, rinsed and drained
  • 2 Tbsp Tahini
  • 1/4 cup prepared basil pesto
  • 3 Tbsp lemon juice

Method

In a food processor, first mince garlic and pine nuts.  Then add remaining ingredients and puree until smooth.

Serve with raw vegetables, pita chips, baguette slices or even spread it on a sandwich. Store in refrigerator.

* To “toast” pine nuts, I put mine in a skillet over low heat. Stir frequently until golden brown.
