Pumpkin Spice Over Ice

Give that White Russian a little pumpkin spice.

Pumpkin bread, pumpkin lattes, pumpkin pie, pumpkin shakes, pumpkin _____?

Pumpkin cocktails? Uh-huh.

Inspired by a Pumpkin Mudslide recipe that was just “okay,” I went a mixing and created basically a Pumpkin White Russian.  It’s a super seasonal sipper.

Ingredients List

Serves 2

  • 1/2 cup pumpkin puree
  • 1/2 cup low-fat milk
  • 2 tsp sugar
  • 1/2 tsp ground cinnamon (or pumpkin pie spice)
  • 1.5 oz Kahlua Especial (full shot glass)
  • 1.5 oz Vodka (full shot glass) – I used Pinnacle and think the Whipped Cream or Vanilla Pinnacle would be excellent in this
  • Low-fat whipped cream (I used French Vanilla low-fat Redi-Whip)
  • Ice

Method

Whip the first six ingredients together in a drink shaker, mixer or blender. Pour into two glasses over ice. Top with whipped cream.

Note: If you use basic Kahlua, you may not need as much sugar. The “Especial” is pretty strong stuff.
